Ixsir Grande Reserve White - 2017
Caring deeply about our environment, we felt the Ixsir winery needed to be highlighted in our menu.
The winery overlooks Basbina, Batroun in northern Lebanon and won a Green Good Design in 2011. It combines a restored 400-year-old feudal house with a modern-built, green-skinned structure
Its cellar spaces are buried within the ground as a thermal sponge, creating the needed equilibrium of temperature and humidity.
The winery also recycles all wastewater and vegetable residue, which is turned into compost and rainwater is used for irrigation.
It shows you can make exceptionnal wine, combining ancient knowledge and modern techniques all the while while being respectful of the environment.
This white Grande Reserve is fresh, full bodied and with a good acidity with butter peach and citrus notes.
It pairs nicely with a poultry dish but is also very enjoyable with creamy dips.
Try to serve it straight out of the fridge.
